Matcha is rich in catechins, a class of plant compounds found in tea that is known to be a natural antioxidants. Matcha concentration of the epigallocatechin gallate (EGCG) catechin is 3 times higher that the largest literature value for other green teas. https://ncbi.nlm.nih.gov/pubmed/14518774

Due to Matcha being so high in antioxidants, studies have shown that in mice on a high fat diet who were given Matcha, had significantly lower blood glucose levels as well as lower cholesterol levels. Matcha Tea Cookies

Matcha Tea Cookie Ingredients:

  • 2 cups of all-purpose flour
  • 1 tablespoon of Organic Matcha green tea 
  • ½ teaspoon of baking soda
  • ½ teaspoon of salt
  • 1 cup of packed brown sugar
  • ¾ cup of melted and unsalted butter
  • ½ cup of granulated sugar
  • 1 tablespoon of pure vanilla extract
  • 1 egg
  • 1 egg yolk

Directions

  1. Preheat the oven to 325 degrees.
  2. Grease baking sheets or line with parchment paper.
  3. Sift Organic Matcha green tea powder, flour, baking soda, and salt together in a bowl.
  4. Beat brown sugar, butter, and granulated sugar together in a large bowl. (It’s best to use an electric mixer.)
  5. Fold in vanilla extract, egg, and egg yolk until the mixture is light, creamy, and free of clumps.
  6. Mix flour mixture in with creamed butter.
  7. Continuing mixing until dough is blended.
  8. Use a tablespoon to form cookies, leaving 2–3 inches in between each serving.
  9. Bake in the oven until edges are lightly browned, an average of 8–10 minutes.
  10. Let cool on baking sheet for a few minutes before moving to a wire rack to cool completely.

After tealeaves are plucked they are steamed or pan fired. This is to inactivate the enzymes that would otherwise degrade the tea. The tealeaves are then rolled to squeeze the juices to the surface of the leaf. Then the leaves are dried in high-temperature air to reduce moisture.
