 Matcha Cookies

Ingredients 

  • 1/4 cups almond flour 
  • 4 tablespoons of Zen’s Premium Matcha Tea
  • 2 tablespoons Swerve
  • 1 pinch salt
  • 3 ounces unsalted butter (chilled and cubed)
  • 1 teaspoon vanilla extract
  • 1 large egg
  •  

    Directions

  • Add ingredients into mixing bowl, add the almond flour, matcha, swerve , and salt.
  • Rub the butter into the flour mixture.
  • Add vanilla and egg, mix into a sticky dough.
  • Turn the dough out of the bowl. Shape into a disc, cover with plastic wrap and chill for 1 hour.
  • Preheat your oven to 320F. Prepare a cookie sheet by lining with parchment paper.
  • Remove from fridge and dust your cookie cutters, rolling pin and workspace with flour. Use a rolling pin to roll out the dough about 1/4-inch thick and cut out with assorted cutters. Place on 2 parchment-lined baking sheets.
  • Bake until the edges of the cookies are a light golden, about 15-20 minutes. Transfer the cookies to a rack to cool.
